Beef Stew ala Cheryl

When I made my menu. I had originally planned to try a recipe off of Allrecipes.  But because of the holiday and the snow, I was given the day off work, because of a light schedule so I decided to play today and switch my days around...

Beef Stew ala Cheryl

1 1/2 pounds Stew Beef
4 large potatoes
3 Stalks green onions
3 large carrots
2 tbsp beef base
2 c boiling water
2 Tbsp A1 Steak Sauce
2 Tbsp olive oil

for breading:
1/2 c AP flour
2 tsp parsley flakes
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder

Mix the breading ingredients in a covered container, I use an old country crock plastic container. Shake to blend.

Cut the beef cubes into reasonably sized pieces and add to the container, I have to do this in two batches.  Shake to coat and set aside.  Put the skillet on the stove and add the oil.  Heat at Medium High heat.  Once the oil is rippled, hot but not smoking, add the meat.  Do not discard the extra flour mixture.  Cook til browned, some pieces will need to be set on three or four sides.

Once browned remove from heat and repeat as needed, til all meat is browned.
Cut two of the potatoes into cubes and slice one carrot, and place in the bottom of your crockpot.  Add 1/2 the meat on top then repeat and layer the last sliced carrot on top.
Slice the green onions and add to the crockpot.  Boil two cups of water, add the beef base, A1 and the remainder of the flour mixture.  Whisk to incorporate the flour mixture.  Pour over the ingredients in the container and put on the lid.

Cook on High for 3-4 hours or Low for 6-8 Hours  Enjoy!
